Recipe – Mango Bubble Tea

For all of us that just love to have bubble tea and can’t find it anywhere, now you can make your own, thank you the people over at THIS TABLE for the awesome start to our bubble tea recipe collection!

1/2 cup dried tapioca pearls
4 tsp Tropical Green Tea
3/4 cup water
1/4 cup Mango White Balsamic
2 tbsp fresh grated ginger
2 tbsp Clover Blossom Honey
1/2 cup water or pineapple juice
6oz chopped mango (frozen)
1 cup coconut milk
1 cup ice

Step 1 – Bring 2 cups of water to a boil, then add tea leaves. Brew tea for 10 minutes, then chill mixture in the fridge. Drain tea leaves and reserve tea in the fridge.

Step 2 – With an immersion blender or blender, puree mango, honey, balsamic, coconut milk and ice with a 1/2 cup of water or pineapple juice. Stir brewed tea into mango mixture and chill in the fridge.

Step 3 – In a saucepan, bring 4 cups of water to a boil. Add in tapioca balls, and stir to keep from sticking – balls should float within a few seconds. Reduce heat to medium, and simmer for 10 minutes, then remove pan from heat. Drain tapioca in a colander and divide into 2 glasses. Top up each glass with equal parts mango/tea mixture immediately and serve with fat straws large enough for tapioca balls to squeeze through!
